1 c. finely chopped onion
2 c. finely chopped potatoes
1 c. finely chopped celery
2 cans minced clams with juice
3/4 c. butter
1/2 tsp. sugar
3/4 c. flour
1 tsp. salt
1 qt. half and half

Directions:
Directions:
Drain juice from clams into medium saucepan. Place vegetables in clam juice; add enough water to cover vegetables. Cover and simmer until vegetables are barely tender. Meanwhile, melt butter in a large soup pot. Add flour until blended. While stirring constantly, add cream. Cook at stir with wire whisk until smooth and thick. This is very important. Add undrained vegetables and clams; heat through. Season with salt, pepper, and sugar to taste. (To make potato soup, do not add clams.)
