1 lb. dry Maine Yellow Eye Beans
1 tsp. Baking Soda
1 c. Brown Sugar
1 tbsp. Molasses
1/2 tsp. Ginger
1/2 tsp. Dry Mustard
1/8 tsp. Pepper
1 1/2 tsp. Salt
small piece Salt Pork
small Onion (whole)

Directions:
Directions:
Soak beans over night in cold water, making sure there is at least double the water as beans. As the beans soak they will swell to twice their size and you want them covered in water in the morning.
In the morning, drain and cover with hot water. Add baking soda, bring to a boil and then simmer (about 10 min) until you can remove a spoonful, blow on the beans and the skin will lift. Next, drain off the water.

In bowl, mix brown sugar, molasses, ginger, dry mustard, salt & pepper. Add enough hot water to dissolve. Slice salt pork about half way through and place in the bottom of bean pot, crock pot or other oven baker. Peel and add onion to baking pan . Add beans, mixture of other ingredients and cover with hot water. Bake in 325 º oven (checking often to make sure they remain covered with liquid) or in crockpot on low for 8 hours.

Great Gram baked beans a lot when we were growing up. They were one of great grampa's favorites during the winter and in early years, he always got a big pot for the hunting crew as they headed for a week in camp!!
