2 c flour
3 tsp baking powder
2 tsp sugar
1/2 tsp cream of tartar
1/4 tsp salt
1/2 c shortening
2/3 c milk

Directions:
Directions:
Stir together flour, baking powder, sugar, cream of tartar, and salt. Cut in shortening until mix resembles coarse crumbs. Make a well in the center, add milk all at once. Stir just till dough clings together( add more milk if needed). Knead gently on a lightly floured surface for 10-12 strokes. Pat to 1/2" thickness. Cut with a glass or biscuit cutter. Transfer to an ungreased baking sheet. Bake at 450º for 10-12 mins.
Makes 10-12 biscuits.

Buttermilk Biscuits:
Prepare as above, except stir 1/4 tsp baking soda into flour mix, and substitute 3/4 c buttermilk for the milk.

Cheesy Biscuits:
Prepare as above. Add grated cheese to flour mix before adding milk. Place on pan, and sprinkle cheese on top of biscuits before baking.

Sour Cream Biscuits:
Prepare as above, except use 1 c sour cream, and only 2 tbsp milk.
