1 cup shortening
1 cup sugar
1 egg
1 tsp vanilla
1/2 cup molasses
3 cups flour
1 tsp cinnamon
pinch salt
2 tsp baking soda dissolved in 3 tbsp. hot water
flour to handle
raspberry jam for center

Directions:
Directions:
Cream shortening, sugar, add egg & vanilla. pour in molasses.
Add baking soda, then dry ingredients. Form dough - use flour to handle.
roll out 1/4 " thickness, cut into circles - small juice glass works well.
Make sure half of the circles have a tiny circle punched out in the center.
Bake at 350º for 8 - 10 minutes - don't over bake. When baked add raspberry jam to bottom & then place the circle with the hole in the center
on top gently press together, while still warm.
