PREPARATION:

To prepare these rissoles, you need some chestnut flour, raisins, vanilla, lard or olive oil. In a bowl, put the flour, raisins (soaked in water and then well-dried), the vanilla, and sufficient water to make a well- amalgamated, fairly soft mixture. Leave to rest for some hours. In a pan containing boiling oil (or lard if you wish) fry the preparation a spoonful at a time. When the rissoles are cooked, place on straw paper and serve piping hot with a dusting of powdered sugar.
