1/4 c. butter, cubed
2 1/2 c. sliced carrots
1 large potato, peeled and cubed
1 c. onion, chopped
1 stalk celery, chopped
3 c. chicken broth
1 t. ground ginger
1/2 c. heavy whipping cream
1 t. curry powder
1/2 t. salt
1/8 t. pepper

Directions:
Directions:
Heat butter in pot over medium hear. Add carrots, potato, onion, celery, ginger, and broth.

Cover and cook, stirring occasionally until vegetables are tender, about 30 minutes. Uncover and cool for 15 min.

Blend ingredients in food processor, or hand blender until smooth.

Stir in cram and remaining ingredients and cook over low heat until heated through, about 10 minutes.
