1 tsp. olive oil
1 Tbsp. flour
1 small onion, chopped
2 Tbsp. Burgundy or other dry red wine
½ med. green bell pepper, chopped
1 c. finely chopped fresh mushrooms
1 garlic clove, minced
2/3 c. canned tomatoes, chopped (include juice)
½ lb. eye or the round steak, cubed
2/3 c. beef stock or beef bouillon
1 tsp. paprika
1/3 c. plain nonfat yogurt
½ tsp. dried marjoram
2 Tbsp. chopped fresh parsley
¼ tsp. caraway seed
¼ tsp. dried dillweed
½ tsp. salt
¼ tsp. pepper

Coat a medium nonstick skillet with vegetable oil spray and heat the olive oil over medium heat. Add the onion and bell pepper and saute until softened, about 5 minutes. Stir in garlic and cook for 1 minute. Add the beef and cook, stirring until it loses its red colour. Add the marjoram, paprika, caraway, dill, salt, pepper and flour and stir to blend. Add the wine and cook for 2 minutes, reducing heat to low.

Stir in the mushrooms, tomatoes, and beef stock; cover and simmer for 30 - 45 minutes or until beef is tender

Stir in yogurt and fresh parsley and heat through. Serve immediately over broad egg noodles.
