Crust:
1 c. flour
¾ c. oatmeal (oats)
1 c. brown sugar
½ c. butter, melted
1 tsp. cinnamon
(I double for extra crumbles)

Filling:
4 c. rhubarb
1 c. sugar
2 tbsp. corn starch, rounded
1 c. water
1 tsp. vanilla

Directions:
Directions:
Mix crust ingredients until crumbly.
Press half – or more – of the crumbs into 9” x 13” pan.
Set remainder aside.

Mix and cook filling ingredients in saucepan on stove until thick and clear.
Pour over crumbly crust in pan.
Top with remaining crumbs. Do not press crumbs down.
Bake at 350 degrees until lightly browned.
