1 lb. moose cut into 1/4 in. wide strips (Venison, beef, pork, duck, goose, grouse, antelope, or chicken can also be used)
1 egg
7 oz. cornstarch.
Vegetable oil (enough to deep fry moose)
1/3 cup of each: grated carrots, shredded celery, chopped green onions, shredded green pepper
2-5 roots finely chopped ginger
2 gloves garlic
3 tbsp. each: Soya sauce, cooking wine, white vinegar.
1 tbsp. sesame oil
1/2 cup sugar
Chinese chill sauce to taste

Mix egg, cornstarch, 1/4 cup water. Add moose. Drop coated moose into hot oil, separate with chopsticks, cook until meat is crispy. Remove, set aside. Add 1/2 tbsp. oil to wok, celery, carrots, green pepper, green onion, and ginger, stir-fry over high heat Add garlic, soya sauce, wine, vinegar, sesame oil, sugar, and chili sauce. Bring to a boil, add moose, mix well and serve.
