4 slightly beaten eggs
1 c frozen mixed peas and carrots
1 c chopped cooked ham, beef, or chicken
1 c shredded cheddar cheese (4 oz)
1/2 c milk
1/4 tsp minced dry onion

2 medium potatoes, peeled and shredded (2 c)
1/2 c shredded cheddar cheese (2 oz)

Directions:
Directions:
Preheat oven to 350º.
Bake for 45-60 minutes, or until the center of the pie is set.

1. In a bowl, combine eggs, vegetables, ham, 1 c cheese, milk, and onion. Set aside.

2. Combine shredded potatoes and 1/2 c cheese.
3. Press potato and cheese mixture onto the bottom and up the sides of an ungreased 9" pie plate.
4. Pour filling into potato lined pie plate.

5. Bake at 350º for 45-60 minutes, or until the center of the pie is set.
6. Let stand for 5 to 10 minutes before serving.
