1 c orange juice (1 large orange)
1 c dates, chopped
2 c nuts, chopped
1 tsp vanilla
1 c sugar
1 beaten egg
2 T shortening
2 tsp orange rind
2 c flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt

Directions:
Directions:
Preheat oven to 325º.
Bake in loaf or coffee cans for 50-60 minutes.

1. Squeeze the juice of the orange into a cup, and add boiling water to fill the cup.
2. Grind or grate orange rind and add enough dates to make 1 cup.

3. Add water and orange juice and date preparation into a large bowl.
4. Add baking soda, vanilla, sugar, egg, and shortening.

5. Sift the flour, baking soda, and salt.
6. Add to liquid ingredients and mix thoroughly.
7. Add nuts.

8. Bake in loaf or coffee cans at 325º for 50-60 minutes.

9. Cool in pans overnight before slicing.
