Ingredients: 2 Tbsp butter, melted Sliced Bread - 6 slices (oatmeal, sturdy white, or mixed grain) 6 slices bacon, cooked or proscuitto (optional) 12 oz mozzarella, fresh or regular, sliced (optional) 12 eggs 1/2 cup milk (or 1 can evaporated milk) 1 bunch chives or green onions, sliced 1/2 tsp salt 1/2 tsp freshly ground pepper sliced green tomatoes (about 4 medium) crumbled goat cheese or feta cheese 4-8 oz (about 1/2 - 1 cup) snipped fresh sage (or rosemary, thyme, tarragon) or 1 Tbsp dried Sage or dill Optional: Pine Nuts browned in butter for topping, instead of cheese or along with it

Directions:Preheat oven to 350º Pour melted butter in 13x9 baking pan or rectangular casserole dish. Spread with fingers to cover bottom. Top with bread slices, covering the entire pan bottom cutting pieces to fit as needed. Top with bacon if using. Top with mozzarella if using.
Mix eggs with milk, chives, salt and pepper. Pour over bread in dish. Top with sliced green tomatoes to cover top. Sprinkle goat cheese over top. Sprinkle minced fresh sage over top. (can be refrigerated overnight at this point) Bake in preheated oven for 50 minutes. Heat under broiler for a few minutes until top starts to turn ALTERNATIVE: cube 6 slices of bread, mozzarella, tomatoes and chop bacon. Mix into egg mixture. |

Notes: Green tomatoes have a wonderful tangy flavor. The goat cheese and sage complement them perfectly. A beautiful easy recipe, great way to use up those late season tomatoes and herbs before frost comes. Mix and match based on what you have on hand, but stick to 'fresh tangy' cheeses and herbs as suggested.
