1 large onion
3 medium potatoes
2-3 medium carrots
1 1/2 cups minute rice
1 can vegetables ( green peas or corn )
1 lb fried ground beef.
1can tomato soup - mixed with 1/2 can water
salt & pepper to taste

Directions:
Directions:
Preheat oven to 375º.
Grease large casserole dish & line bottom of dish with sliced onions
then sliced potatoes, sliced carrots, pour vegetables over carrots, drain
ground beef & place over vegetables, mix tomato soup & water togheter & pour over the ground beef layer. Use salt & pepper to taste.
place in oven with covered dish for 1 - 1 1/2 hours.

This was Dad's speciality & when he made it, he made sure the dish was big enough that we'd have left overs for a while. Delicious!!!!
