6-8 corn tortillas
cooking oil
1lb. chopped tomatoes
1 small finely chopped onion
2 small cans of chopped green chiles
(for speed, I sometimes use a jar of chunky salsa instead of the tomatoes, onion, and green chiles)
1 cup of cream (I use fat free half and half)
1/2 lb. grated cheddar cheese
1/2 lb. grated Monterey Jack cheese
4 cooked and shredded chicken breasts

Break tortillas into 4 to 6 pieces each. Fry lightly in hot oil but don't harden.
Fry chopped tomatoes, onion and green chilies until soft. (or use a jar of chunky salsa)
In greased baking dish (9X13) place alternate layers of tortillas, tomato mixture, chicken, cream, and grated cheeses. Salting to taste.
Bake 20-30 minutes at 350º or until bottom layer is bubbly. Over cooking may cause cheese and cream to curdle.

For many years I was part of "the Running Group" in Craig. A group of ladies met once a week to run 3 miles together and then celebrate the accomplishment by having a beer and dinner at one of the members' homes. It was a great time to socialize, relax, and build friendships. This recipe was served at Kim Crisp's home.
