1 1/2 cup vinegar
2 1/2 cup sugar
1 1/2 cup beet juice
two 1 litre bottles filled with cooked, sliced beets

The above is for 1 of ~ 3 mini batches ( 5 pound beet )

Directions:

Boil beets about 1 hour (small) 1 1/2 hour ( large )
strain the beet juice with cheese cloth.
Clean skins from beets & slice in small pieces.
