8 ounce of andouille or other sausage (not breakfast sausage) like kielbasa and slice into 1/4 inch slices.
1 green or other color bell pepper, chopped
1 14 ounce can stewed tomatoes
2-4 chicken tenders , each cut crosswise into large chunks
1 small to med onion sliced
1/8 t pepper
1/8 t salt
1/4 t garlic powder
2 c cooked rice

Heat a 12 inch skillet on med with 1 T oil until hot and add the sausage, pepper, and onion and cook about 5 min, stirring constantly and the sausage is lightly brown. Stir in the tomatoes, chicken and seasonings, heat to boiling. Reduce the heat to low, cover and simmer for 10 min until chicken is done and runs clear. Add a cup of the rice and fold into the chicken mixture. You can add more rice if you want or save for another use.

I love cajun food. I like things a little hotter, so I add some tabasco sauce and then set out the sauce in case anyone wants some more.
