4 1/2 cups sugar
1 cup cornstarch
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons lemon juice
6 pounds tart apples, peeled, cored and sliced

Directions:
Directions:
In a large dutch oven or saucepan blend the first 4 ingredients and 1 teaspoon salt.Stir in 10 cups water. Cook and stir until thickened and bubbly. Do not turn the heat up high because this mixture will scorch easily. Add lemon juice and sliced apples and remove from heat. Fill hot canning jars leaving 1/2" space at the top. Tighten the lids and process in a hot water bath. 15 minutes for pints and 20 minutes for quarts.
