2 lbs. boneless beef chuck roast, cut in 1" pieces
1/4 tsp. pepper
1/2 tsp. salt
2 T. oil
2 T. quick cooking tapioca
6 medium carrots, cut in 1/2" pieces
9 oz. frozen cut green beans
2 c. frozen small onions or cut up onions
2 cloves garlic, minced
14 oz. beef broth, reduced sodium
1 c. burgundy wine

Directions:
Directions:
Sprinkle meat with salt and pepper. Brown meat in oil; drain off fat. (optional) Place meat in 3-4 qt. slow cooker. Sprinkle with tapioca. Stir in carrots, green beans, onions, and garlic. Pour beef broth and wine over meat mixture in cooker. Cover and cook on low for 10-12 hours or on high 5-6 hours.
