2 eggs
1 1/4 cup sugar
1/2 tsp cloves
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1 cup pumpkin
1/2 cup canola oil
1 2/3 cups flour
1 tsp baking powder
1/4 tsp salt

Directions:
Directions:
In a small bowl mix flour, salt and baking powder. Set aside. Beat eggs and add sugar. Add cloves, cinnamon, nutmeg and allspice. Blend in pumpkin and then the oil. Lastly, add the dry ingredients and blend well. Turn into a greased and floured loaf pan. Bake in a 350º oven for 60-65 minutes.

Serve with orange zested cream cheese. Take a container of Philadelphia brand softened cream cheese. Whip and add the zest and the juice of an orange and a few tablespoons of confectioners sugar.

1 large can of pumpkin makes 3x recipe. One recipe makes 1 large or 3 small loaf pans. Small pans bake in 40-45 minutes.
