1 ea. medium zucchini, summer squash, red pepper & yellow pepper, cut into bite-sized pieces
1 lb. asparagus, cut into 2" pieces
1 red onion, cut into wedges.
Whole garlic cloves
3 Tbs. extra virgin olive oil
Salt and ground black pepper

Directions:
Directions:
Heat oven to 450º. Place zucchini, squash, peppers, asparagus and onions in large ziploc bag.
Add olive oil, 1 tsp. salt and 1/4 tsp. black pepper; toss gently to coat. Arrange vegetables in single layer on a parchment lined roasting pan.
Roast 20-30 min., stirring occasionally, until vegetables are lightly browned and tender.
