12 large eggs, hard boiled and peeled
3/4 to 1 cup of Miracle Whip
2-3 tsp prepared yellow mustard
2 small jalapenos, seeded and chopped
6 pieces bacon, cooked crisp and crumbled

1. Slice the hard boiled eggs in half lengthwise
2. Remove the yolks and put them in a mixing bowl
3. Mash the egg yolks with a fork
4. Add the Miracle Whip and mustard to the mashed egg yolks and stir
until well combined
5. Mix in the jalapenos and bacon
6. Spoon the egg/bacon/jalapeno mixture evenly into the egg holes
7. Sprinkle with paprika
8. Chill until ready to serve

• If egg filling seems dry, add just a tiny bit more Miracle Whip and a squirt of mustard until you get it to the consistency you like.
• You can save about 1.5 pieces of bacon to use as a garnish with paprika on top of the eggs.
• These will not be as hot/spicy as you might expect. If you want more heat, you could leave most of the membranes within the jalapenos
• If you like ‘fancy’ eggs, you can use a cake decorating bag and tip to pipe the mixture into the egg holes.
