Ingredients: 3 cups potatoes, peeled, cut into cubes and boiled. 4 tbsp butter 4 tablespoons flour 2 cups whole milk ˝ lb velveeta cheese (diced) ˝ cup cheddar cheese (shredded) 1 package (1 lb) of smoked sausage sliced into ‘coins’ or ‘half moons’ ˝ tsp of each: Salt, pepper, paprika

Directions:1. Preheat oven to 350 degrees 2. Brown smoked sausage in frying pan (do not add oil) for about 15 min 3. Put sausage in 9x13 baking dish – add potatoes and give it a gentle toss to mix 4. Mix all remaining ingredients (except shredded cheese and paprika) in a saucepan over medium heat until warm, melted and smooth. (use a whisk and stir constantly) 5. Pour warm cheese sauce over potatoes and meat. 6. Sprinkle shredded cheese over the top and then sprinkle lightly with paprika. 7. Bake for 35-45 minutes (top should be golden brown) |

Notes: I found a similar recipe when searching by ingredients (I had smoked sausage and potatoes) changed it up a bit and we love it!
• Shred your own cheddar – it’s better! (I also substitute Colby jack or pepper jack – I just use whatever I have on hand) • Skinless smoked sausage works best, but okay to use skin-on if that’s what you have • You can substitute hot dogs, little smokies or even diced ham for smoked sausage
