2 lbs. ground beef
1 onion, chopped
3 carrots, shredded
1 c. celery, chopped
2 (28 oz.) cans diced tomatoes, undrained
1 (16 oz.) can red kidney beans, drained
1 (16 oz.) can white kidney beans, drained
4 cups beef stock
3 tsp. oregano
2 tsp. pepper
5 tsp. parsley
1 tsp. tabasco sauce (optional)
1 (20 oz.) jar spaghetti sauce
8 oz. pasta

1. Brown ground beef in large skillet and drain fat.
2. Add beef and all ingredients except pasta into a large crock pot.
3. Cook on low for 7-8 hours or on high for 4-5 hours.
4. Before serving, cook pasta according to package directions
5. Drain pasta & add to soup and serve

• This recipe makes a lot of soup – at least 12 servings. This recipe is easy to half if needed
• I keep Italian seasoning in the pantry, so I use it and pepper instead of the parsley & oregano
• I use ditali pasta, but really any pasta you have on hand will work
• To make it easier, I just put the pasta in the bottom of each bowl and pour the soup over it. (I do mix it all before storing the leftovers though)
