1 qt. fat free Half and Half
2 cups Milk
1 bottle of beer (ale or lager)
1 8 oz package cream cheese
1 lb of bacon cooked and crumbled
16 oz. box of Elbow Macaroni cooked and drained
1 to 2 lbs of block cheese shredded (include gouda and colby jack)

1 stick butter and equal amount of flour

Go ahead and get macaroni and bacon cooked and prepped ahead of time (takes about 15 minutes)

In a tall pot or saucepan melt butter and add equal amount flour to create rue.
Stir or whisk quickly until rue begins to turn a medium tan.

Slowly pour in milk, half and half, and beer, stirring throughout.

Cook on medium hear for around 10-15 minutes or until mixture starts to bubble and thicken.

Add cream cheese and allow to melt in.

Slowly add cheese by handfuls stirring constantly

Reserve about 3 handfuls to top mac with later.

Hit cheese mixture with salt,pepper, red pepper to taste. Mix with cooked noodles and bacon.

Bake off in 9 by 13 pan at 375 for 20 minutes, Top with cheese and serve.
