1-pkg Quinoa

Bowl 1:
- 1/2 cup chopped red pepper
- 1/2 cup chopped celery
- 1/2 cup diced cucumber
- 1/4 cup chopped green onions
- sprinkle salt

Bowl 2:
- 3tbsp chunky peanut butter
- 2tbsp lime juice
- 2tbsp rice vinegar
- 2tsp soya sauce
- 1 clove garlic minced
- 2tsp grated ginger root

Cook Quinoa and cool completely. Add Quinoa to Bowl 1 and mix. Whisk Bowl 2 (nutty lime dressing should be runny). Combine all ingredients and refrigerate.
