2 cups (12oz) fully cooked ham (chopped or ground)
1/2 cup finely chopped green onions
1/2 cup chopped green peppers (optional)
8 flour tortillas
Shredded Cheese
4 beaten eggs
2 cups light cream or milk
1 TBSP flour
1/4 tsp salt
1/4 tsp garlic powder
Few drops of bottled pepper sauce (Tabasco)

Directions:
Directions:
In a bowl combine ham, onions and green peppers.
Place 1/3 cup of mixture and 3 TBSP shredded cheese on each tortilla, roll up.
Arrange with seam side down in a greased baking dish.

Combine eggs, cream, flour, salt, garlic powder and Tabasco sauce.
Pour over tortillas.
Cover and refrigerate several hours or overnight.

Preheat Oven to 350º
Bake 45-50 minutes or until set.
Sprinkle with remaining cheese and bake 3 more minutes.
Let stand for 10 minutes before serving.
