6 cups fruit - any combination of dates, raisins, cherries, peel
3/4 cups walnuts (chopped)
3 and 3/4 cups brown sugar
1/4 cup + 2 tbsp butter
7 and 1/2 cups flour
1 and 1/2 tsp baking powder
1 and 1/2 tsp salt
1 tbsp soda
3 cups boiling water
3 eggs unbeaten

In large deep bowl or pan put #1,2 and 3
In smaller bowl measure and stir #4,5 and 6

In large measure dissolve #7 (soda) and #8 (water) and pour liquid over #1,2 and 3 (fruit mix).

Add #9 (eggs) and dry measures #4,5.and 6. Mix all together, but do not beat!

Put cake batter into 5 buttered loaf pans and bake apprx 45 minutes until centre of cake is cooked. Do not overbake. Let stand 10 minutes after removing from oven. Remove from pans and cool. Store in double plastic bags and freeze. Loaves can be kept indefinitely, if frozen. This is one recipe that improves with age.

Another of Nana's Christmas recipes. Definitely gets better the longer it's frozen. You can change the fruits to ones you might prefer.
