1 egg
1 Tbs milk
4 cups bbq potato chips, crushed
1/2 pound boneless, skinless chicken breasts, cut into strips or cubes

In a shallow bowl, whisk egg and milk. Place potato chips in another shallow bowl. Dip chicken in egg mixture, then roll in chips. Place in a single layer on a greased baking sheet. Bake at 400 for 10-15 minutes or until meat is no longer pink.

It is less messy to put the crushed chips in a ziplock bag and shake the chicken to coat it. Most of the time I just crush the chips while they are still in their bag, but do note that the smaller the crushed chip the better it will adhere to the chicken.
