5-14.5 can(s) chopped tomatoes, drained or 6 cups peeled, seeded, chopped, fresh tomatoes
8 bell peppers.2 red.2.yellow.2 green, orange (ok to mix and match)
6 c sugar
2 Tbsp salt
1-2 tsp crushed red pepper flakes
6 jalepenos..seeded and no membrane
3 medium onions
3 c white vinegar
6 oz. liquid pectin (2 packets)

Chop all ingredients to uniform size.
Mix all ingredients together, except pectin and bring to a boil. Turn down and simmer for 2 to 2 1/2 hours until thickened. It should mound on your spoon. Whisk in the 2 boxes of pectin and boil for 1 minute. Pour into sterile jars filling to 1/2" headspace. Remove air bubbles and re-fill if necessary. Wipe rims, add hot lids/rings and process in pressure canner at 11 pounds for 15 minutes for pints in a dial gauge or 10 pounds for 15 minutes for weighted gauge.

This is a little time consuming, but after all you are canning it so you are making more than just for one meal.
This is fantastic relish, I use it for so many recipes. Use just as a dip, add cream cheese, add to meatloaf, spaghetti sauce, sloppy joes! Endless ways of using it. My dad thinks my sloppy joes are the best he ever had. It has to be because I use this into my mixture. I can't keep enough of it. Mom and I use to buy Harry and David's Pepper/Onion Relish by the case. Now that I found this recipe it replaced Harry and David's and save a lot of money. You will end up making several batches.
