4 cans (28oz.) petite diced tomatoes
2 bunches green onions, chopped finely
5 whole jalapeno peppers, chopped finely
1/3 cup fresh cilantro or 3 tbsp. of dried cilantro
2 tbsp. white vinegar
2 tbsp. chili powder
2 tbsp. garlic salt
1/2 tbsp. salt

In a large bowl empty cans of diced tomatoes (do not drain). Mash tomatoes until all chunks are gone with a potato masher or by hand. Add finely chopped cilantro and onions.

Add the rest of the ingredients except jalapeno peppers. This recipe calls for 5 whole (seeded) finely hopped jalepeno pepppers, you may choose to add more or less. This is where the heat is controlled. 5 will make it medium.

The last, most important part, is that it be served chilled. So sample it and put it away for a few hours in the fridge. Serve with tortilla chips or Tex -Mex food.

Note: Season with the jalapeno to just shy of your wanted heat, as the chilling time will increase the heat of the peppers.
