3 (15 oz) cans of "Le Sueur" Very Young Small Sweet Peas
1 Large "sweet" onion
1 4 oz. Jar of Pimentos
3 Large hard boiled eggs
3/4 to 1 lb. Velveeta Cheese
3/4 to 1 C. Mayonnaise
1 Tsp. Salt (to taste)
Paprika

Directions:

Drain Peas and place in 2 qt.bowl
Chop Onion, Velveeta, and Eggs into small pieces
Drain the Pimentos
Add all ingredients except Paprika to drained peas and stir together well
Add salt to taste and sprinkle with Paprika
Refrigerate for at least one hour
