1 stick unsalted butter
3 tablespoons flour
2 cups milk
1 small onion, thinly sliced
2 - 3 pounds fresh potatoes, peeled and thinly sliced
S & P to taste
1-2 pounds smoked pork chops (basically ham chops)

Directions:
Directions:
Make a roux sauce for scalloped potatoes. Heat butter until melted and slight boil. Add flour, stirring constantly until flour is fully absorbed by butter and is thick and lumpy. Add cold milk, stirring constantly until mixture thickens. This is your sauce for scalloped potatoes. Add S & P to taste, remove from heat.
Spray casserole dish with PAM. Spoon a small amount of roux sauce in bottom of casserole dish. Layer potatoes, onion and sauce for scalloped potatoes. Bake for 40 minutes. Remove from oven and add smoked pork chops, bake for another 20 minutes.

I remember Mommy making this delicious dish. The combination of potatoes and smoked pork chops were fantastic. She always served this dish with applesauce.
