Jalapeno Southwestern Cornbread

Using egg whites instead of a whole egg
Replacing oil with applesauce
Using buttermilk instead of whole milk
Reducing the amount of cheddar cheese and using its reduced-fat alternate (less than 5 grams of fat per ounce of cheese)

1 c. yellow cornmeal
1c. all-purpose flour
3 tbs sugar
1 tbs baking powder
2 egg whites,lightly beaten
1 c buttermilk
1/4 c. unsweetened applesauce
1 (4-ounce) can diced green jalapenos ( can use fresh ones )
3/4 c. (3 ounces) finely shredded reduced-fat sharp cheddar cheese

Put the oven to 400 degrees . Spray oil on six large, 3 inch muffin cups with no stick spray. and aside.

In a large bowl, stir together, cornmeal, flour, sugar and baking powder. Make a well in the center of the mixture.

In a small bowl, stir together, egg whites, buttermilk, and applesauce. Add the applesauce/ buttermilk mixture to the cornmeal mixture and stir just until moistened. Fold in the jalapeno peppers and 1/2 cup of the cheese.

Spoon the batter into the prepared cups, filling each 3/4 full. Top with the remaining cheese. Bake for 20 - 22 minutes or until golden brown, and a toothpick inserted in the center comes out clean. Cool the muffins in the muffin cups for 5 minutes. Then remove the muffins and cool on a wire rack.

Cornbread muffins are finger licken good with fried chicken or served with a big bowl of spicy chili or hearty soup, these giant cheddar-and-corn muffins are all you need to round out a simple meal. Add a healthy southwestern side to your southwestern meal of tacos; chicken n' grits; chili or hearty soup.
