(any of these) 3 lbs - beef, lamb, mutton or goat
1/2 lb bacon cut in 1 inch pieces
6 potatoes, peeled and sliced in thick slices
16 small whole onions or less of the large ones sliced thick
Salt & pepper
2 Cups of water

Directions:
Directions:
Cut meat into pieces, trimm off as much fat as possible. Place a layer of meat in heavy pan or Dutch Oven.
Add a layer of bacon, onions and potatoes, sprinkle with salt & pepper
Repeat layers, ending with potatoes. Add water and bring to boil. Cover, reduce heat and cook gently for about 2 1/2 hours or till tender.
