4 loin pork chops, cut 1/2 inch
Salt and pepper to taste
1 can chicken broth (10 oz.)
1 jar spaghetti sauce (15 oz.)
1 onion, sliced thin
1 T. olive oil
1 green pepper, cut into strips
3/4 c. converted rice, uncooked
1/2 c. ripe olives, sliced
2 c. zucchini squash, thinly sliced

Directions:
Directions:
Season pork chops with salt and pepper; brown on both sides in olive oil in a large skillet. Spoon off fat; stir in chicken broth, spaghetti sauce, onion and green pepper. Bring to a boil; cover and cook on medium for 15 minutes. Stir in rice and olives; arrange zucchini on top and cover and cook on medium-low heat for 45 minutes.
