Cilantro Lime Chicken Recipe

4 chicken breasts or 6 to 8 chicken strips
1/4 c chopped onion
3 cloves garlic
1 jalapeno (grated)
1 c chicken stock
1 lime zested plus juice of 1 lime
1 tsp smoked paprika
1/4 c cilantro
pinch Red pepper flakes
1/3 c cream

Directions:
Directions:
salt & pepper chicken - brown 5 min. on each side in small amount of oil.
Take up chicken and in skillet saute:
onion, garlic, jalapeno.
Then Add:
chicken stock, lime zest, lime juice, smoked paprika, and red pepper flakes.
Return chicken to pan and simmer to reduce sauce and meld flavors. Add cream right before serving.
Take up chicken and pour sauce over it.
Top with cilantro and squeeze of lime and serve.

*Serve with orzo, rice, or riced cauliflower w/a squeeze of lime.

I also use crock pot chicken for this recipe. Then I have chicken that can be used in different recipes during the week and since the chicken is already cook prep time is shortened.
