1 pound skinless chicken breast cut into 1/2 inch cubes.
1 package cooked and drained mixed vegetable or drained mixed vegetables
1/3 c chopped onion
1/3 c butter
1/3 c flour, either kind
1/2 t salt
1/4 t pepper
13/4 c chicken broth
2/3 c milk
2 9 inch pie crust. I have used the package pie crust that comes in a long package. You can make your own.

Heat oven to 425º. In a saucepan, put chicken, vegetables, add water and cover and boil for 15 minutes. Remove from heat and drain and set aside. Can keep the liquid to have extra. In the same pan over medium heat, cook onion in butter until soft. Stir in flour and salt and pepper. Slowly stir in chicken broth and milk. Simmer over med low stirring often until thick. Remove from heat and set aside. Put chicken mixture into a deep 9 inch pan. Pour broth over the chicken mixture. Cover with rest of pie dough. Seal edges. Make several slits in the top. Bake on a baking sheet for 30 to 35 minutes until golden brown and mixture is bubbly. Cool before serving.
