1 1/2 cups all-purpose flour
1 1/2 cups coarsely crumbled graham crackers
1/4 tsp. baking powder
1/2 tsp. salt
3/4 cup granulated sugar
3/4 cup brown sugar
3/4 cup salted butter (1 1/2 stick)
2 large eggs
1 tsp. vanilla extract
2 cups semisweet chocolate chips (may substitute chucks of Hersheys chocolate bars)
1 cup mini-marshmallows
1 tbsp. heavy cream (optional - if wanted)

Directions:

1. Heat oven to 345 degrees.

2. Mix together dry ingredients in medium bowl: flour, graham crackers, baking powder, and salt.

3.. Cream together softened butter with both sugars in a large bowl.

4. Add eggs and vanilla. If choosing to add cream, may add in this step.

5. Stir dry mixture into the large bowl.

6. Stir in chocolate chips.

7. Stir in marshmallows.

8. Drop tablespoon sized (roughly) cookies onto ungreased cookie sheet.

9. Bake for 12-14 minutes. Do not overcook, to assure chewiness.

Evan decided that he wanted to undertake a baking experiment. He researched cookie recipes, and picked all the ingredients. Originally the cookies also contained blueberries, oats, and peanut butter. However, after much debate, we narrowed down the special ingredients to just chocolate chips and marshmallows. This brought to mind S'mores, which then led to the addition of graham crackers to the flour base.

Evan really wanted to try the addition of heavy cream to the recipe, so half the cookies had cream, and half did not. We found the heavy cream added a small amount of flavor, but caused the cookies to be much flatter. Evan preferred the cream cookies to the non-cream ones, but they were both delicious, so we opted to make the cream optional.

We are hoping for many more Evan baking experiments in the future!!!
