Ingredients: 1 32 oz can of tomatoes (or use you canned tomatoes from your garden) 2 tsps ground chili pepper 1/4 tsp oregano salt to taste 1 cup yellow corn meal 1 pound hamburger cooked (I’ve used ground turkey and ground chicken…whatever you have on hand) chopped onion to taste Green chiles (mild or hot depending on what you like) Chopped or sliced olives (preference) green peppers to taste 1 can creamed corn 1 egg

Directions:In a saucepan bring tomatoes to a boil. Add chili pepper, oregano and salt. Add corn meal. Stir and cook 10 minutes. Take from heat. Add 1 pound cooked hamburger; stir well. Add chopped onions, celery, olives, cream corn and egg. Place in large iron skillet or dutch oven and bake at 350º for 1 hour.

Notes: I am not a real recipe follower. I like to use leftover spaghetti sauce for the tomato. If I don't have enough, I will through in a can of tomato sauce. This is a recipe that was handed down from my Grandma Moses. Most of her recipes say "to taste". This was how I was brought up to cook. For me to follow a recipe exactly, usually means that I have never made it before. I am teaching my kids that when you "cook" (not bake), you really don't need exact measurements. As grandma said "To Taste". Miss you Grandma.
