Mom's Pecan Butterballs Recipe

2 cups flour
¼ cup granulated sugar
½ tsp. salt
1 cup butter, softened
2 tsp. vanilla
2 cups finely chopped pecans

Powdered sugar to roll the cookies in

Directions:
Directions:
Cream the butter and vanilla. Blend in the flour, sugar and salt. Work in the pecans. Set the dough in the refrigerator until firm (about ½ - 1 hour). Using a small melon baller/cookie scoop to form the balls and roll in your hands. These need to be small.
Bake for 25 min. at 325º.
Let cool slightly and then roll in powdered sugar.

Mom made these cookies every year at Christmas and Susan and I have great memories of our time spent grinding the pecans in the nut chopper. This was done manually and we would take turns as it was really tiring. And Mom needed a lot of pecans because she made so many batches.
The original recipe was in a small booklet of cookie recipes that Susan made for her in Brownies.
Years later when I wanted to make the cookies, the booklet was torn and missing half the page. But when I was cleaning out my cookbooks, I came across the correct recipe in a Woman's Day Cookie Cookbook from 1962.
I cried with happiness at finding the recipe and have been making them for everyone every year.
