2 cups of Flour
4 tsps. of Baking Powder
1 tsp. of Salt
2 Eggs
1 and 3/4 cups of Milk
2 tbsps. of Vegetable Oil
I cup of fresh or frozen Blueberries

Directions:
Directions:
In a large mixing bowl, stir together the flour, baking soda and salt. Add the eggs, milk and oil and whisk them together. Stir in the blueberries.

Place a skillet over medium heat. Add a tbsp. of oil. Test the skillet temperature by adding a drop of water. The skillet is hot when the drop of water "dances".

Use about 1/4 cup of batter per pancake. Flip the pancakes over when you can see air pockets breaking on the surface.
