1/4 cup (50 ml) soy sauce
2 tbsp. (30 ml) dry sherry
2 tbsp. (30 ml) vegetable oil
1 tbsp. (15 ml) brown sugar
1 tbsp. (15 ml) grated fresh ginger
1 tsp. (5 ml) liquid honey
1 garlic clove, crushed
1 lb (500 g) pork tenderloin

Directions:

1. In small bowl, combine soy sauce, sherry, oil, sugar, ginger, honey and garlic; stir to mix well.
2. Pour marinade into large plastic bag and add pork tenderloin; seal bag. Let marinate for 10 minutes.
3. Remove tenderloin from bag; reserve marinade. Place on greased barbecue grill over medium-high heat. Close lid and cook for 15 - 20 minutes or until cooked, turning once and basting frequently with marinade. Remove tenderloin from grill and cut crosswise into 1/2 inch thick slices.

*Marinate meat overnight in the fridge and you accomplish two things; you make it more flavourful, and if there's an acid in the marinade, more tender. Ten minutes on the kitchen counter won't turn a tough old chuck steak into a tender sirloin, but it will add flavour, and at room temperature, 10 minutes is the equivalent of an hour in the fridge.
