Ingredients:  
3 - 3 1/2 lb. beef roast
4 med. potatoes (cut into 1 in pieces)
4 carrots (sliced)
1 envelope dry onion soup mix
2 1/2 c. water
2 to 4 T. flour

Directions:
Directions:
In a dutch oven, brown roast, add dry soup mix, and 2 c. water.
Simmer about 2 hrs.
Add vegetables and cook ~30 min. until tender.
Remove meat and vegetables from pan.

Gravy:
Blend 1/2 c. water with flour and bring to a boil over high heat.
Simmer, stirring constantly, until thickened.
Serve over meat and vegetables.
