4 chicken breasts
1/2 t. salt
dash black pepper
1 egg
2 T. prepared mustard
1/4 c. Parmesan cheese
1/4 c. bread crumbs
2 T. oil

Directions:
Directions:
Wipe chicken breasts with damp paper towel. Sprinkle breasts with salt and pepper. In a bowl beat together egg and yellow mustard. In separate bowl, combine Parmesan cheese and bread crumbs, mixing well. Dip each chicken breast in egg mixture, then roll in cheese mixture until evenly coated. Place coated chicken on wax paper allowing coating to set for about 10 minutes.

Sauté chicken on both sides in heated oil for 15-20 minutes or until golden brown and chicken is done.

Be careful not to crowd chicken in pan when cooking, otherwise it will steam and not sauté. For better flavor use clarified butter in place oil. Clarified butter prevents burning and the formation of black specks on the chicken surface.
