1 onion chopped
1 small jalapeno chopped
2 cloves of garlic, minced
6 boneless skinless chicken breast halves, diced
vegetable oil
16 oz can stewed tomatoes
10 oz can tomato and green chili mix
1 can beef broth
1 can chicken broth
1 can tomato soup
2 carrots, diced
2 zucchini, cubed
2 cups water
2 tsp cumin
2 tsp chili powder
2 tbs fresh cilantro
tortilla chips
shredded cheddar cheese

Directions:
Directions:
Saute onion, jalapeno, garlic and chicken breast in oil in the bottom of a stockpot until chicken is cooked and vegetables are soft. Add broths, tomato mixes, soup, water, spices and vegetables. Bring to a boil then lower heat and simmer covered for 1 hr. Add to bowl and garnish with tortilla chips and cheese.

This is a very good soup and its easy to make. Freezes well so it can easily be doubled.
