60g canned tuna, drain excess liquid
75g all-purpose flour
1 tsp. baking powder
3 eggs
30g plain yogurt
3 tbsp. extra virgin olive oil
2 dried tomatoes, finely chopped
10 to 15 pitted black olives, chopped in quarters
grated rind of 1 lemon
50g grated parmesan cheese
coarsely-ground salt and pepper

1. Preheat oven to 180°C.
2. In mixing bowl, beat together the eggs, olive oil and yogurt. Add parmesan cheese.
3. Sift flour and baking powder together and mix into the bowl.
4. Add tuna, dried tomatoes, black olives, grated rind of lemon and coarsely-ground pepper. Mix until combined.
5. Pour into greased loaf pan. Sprinkle coarsely-ground salt and pepper on top. Bake at 180°C for 35 to 40 minutes, until golden brown. Bon appétit!
