3 lb. beef brisket
1 tablespoon vegetable oil
2 onions, chopped
4 cloves garlic, minced
1/2 cup cider vinegar
6 tablespoons brown sugar
2 cups tomato puree
2 cups beef broth
4 cups water
1 pound fresh carrots peeled and sliced.
4 stalks thickly sliced celery
Salt

Directions:
Brown brisket on each side in broiler on on hot grill to seal in juices. In a crock pot or dutch oven heat oil, add onion. Brown onions, add garlic. In a separate pot, mix vinegar, sugar, puree, broth, water salt and pepper. Bring to boil.

Add brisket to crock pot/dutch oven. Pour broth mixture and simmer for 2 hours, turning occasionally. Add carrots and celery, cook for another 30 minutes.

Slice brisket against the grain and serve with gravy and vegetables.
