2 lb. sausage (regular)
1 cup old fashioned raw rice
3 to 4 1/2 cups water
2 pkg. (1 box) Lipton chicken noodle soup
1 green pepper, chopped
1 large onion, chopped
4 to 6 celery stalks, chopped
1 can sliced water chestnuts, drained
1 can mushroom pieces, drained
1 small jar chopped pimentos, drained
1 can cream of mushroom soup
1 (2 3/4 oz.) pkg. sliced almonds

Directions:
Directions:
Crumble the sausage in a saucepan and brown. Combine raw rice, water and chicken noodle soup. Bring to a boil. Cover and simmer until rice is tender, 25 to 45 minutes. Do not stir!

Meanwhile chop the vegetables. When sausage is brown, remove it to a large mixing container. Use the sausage grease to saute the prepared vegetables until tender. To sausage, add water chestnuts, mushrooms and pimentos. When vegetables and rice are cooked, mix with sausage. Pour loosely into a 9x13 inch casserole. Bake at 350º for 30 minutes. (This can be prepared and stored in refrigerator the day before. If casserole is cold, bake 1 hour.) The last 15 minutes of baking time, spread the can of undiluted cream of mushroom soup over the top. Sprinke with the sliced almonds.
