1 lb Italian Turkey Sausage
1 c chopped onion
2 tsp finely chopped fresh garlic
5 cups beef or vegetable broth
1/2 c water
1/2 dry red wine
1 can DelMonte zucchini and tomatoes
1 c thinly sliced carrots
1/2 tsp dried basil
1/2 tsp dried oregano
8 oz tomato sauce
2 cups fresh or frozen cheese filled tortellini
3 tbsp chopped fresh parsley or 1 tbsp dried parsley
1 1/2 c frozen chopped spinach
1/2 c grated parmesan

Remove casing from sausage. Brown in Dutch oven over medium heat. Remove sausage. Using same pan, cook onions and garlic until tender. Add cooked sausage. broth, water, wine, zucchini with tomatoes, carrots, basil, oregano, and tomato sauce. Bring to a boil, then reduce heat and simmer 30 minutes.

Stir in spinach, tortellini, and parsley. Cover and simmer for 20-25 minutes or until pasta is tender. Sprinkle each serving with parmesan. Serve with hot bread.
