2 cups sugar
½ cup light corn syrup
2 egg whites
1 tsp vanilla extract
Chopped pecans (optional)
Wax paper

Directions:
Directions:
1. Stir together sugar, corn syrup, and 1/3 cup water in a 3-quart microwave-safe bowl. Cover with plastic wrap; microwave at High for 3 minutes. Uncover, and microwave at High 6 to 7 ½ minutes or until mixture begins to turn light brown around the edges.
2. Meanwhile, beat egg whites at high speed with an electric mixer until stiff peaks form (about 4 minutes).
3. Using oven mitts, pour hot sugar mixture in a thin stream over beaten egg whites, beating at high speed. Add vanilla and beat just until mixture holds it shape (about 3-4 minutes). Working quickly drop divinity by rounded Tbsp onto wax paper.

Pecan-Orange Divinity: Stir in ½ cup toasted chapped pecans and 1 tsp orange zest after adding vanilla. Proceed with recipe as directed.

Grandma can still make divinity in her trusty heavy pan, but you can turn out the same pillowy-soft candy in half the time using your microwave.

Note: We tested divinity using an 1100-watt microwave oven and a Kitchen Aid mixer. We recommend using the mixer’s wire whisk attachment for beating the egg whites to stiff peaks, and then switching to the paddle attachment while continuing to beat until candy holds its shape.
